These Cilantro Lime Chicken Drumsticks are extra special because they’re the first meat recipe to grace Roots and Sol with their presence. I know what you’re thinking… it’s about damn time! Yes yes, you’re right. This recipe is quick, easy, simple and great for entertaining or weekly meal prep. OR if you’re like me, it’s also great for eating all six drumsticks entirely by yourself… in one sitting. Something I’m really proud of and I’m sure my parents would be proud of me too.

I talk about this a little bit in My Food Philosophy, but the quality of meat products I buy is super important to me and I truly believe it should be important to us all. I won’t go on a rant about the dangers of factory farming because I would grow old writing this post, but long story short, please don’t support it. When shopping for meat, I recommend looking for products that are organic, hormone-free, antibiotic-free, and local whenever possible. I realize that sounds like something straight out of Portlandia, but knowing where food comes from and exactly what’s in it is something we all kinda need to get back in touch with, no?
Yes, these products are definitely going to be more expensive, but ya know what’s funny? We could easily spend $30 at a bar in one night and not think twice, but when it comes to buying quality meat that’s slightly more expensive but substantially better for your health and the planet….. GA$P. Just do it, you’re body will thank you!
For this recipe, I went with chicken drumsticks because they’re flavorful, super inexpensive, and they make me feel like a cavewoman when I eat them. I honestly think they’re the most underrated cut of meat. I mean… c’mon, they’re so fun and adorable looking! But you could easily substitute drumsticks for chicken breasts, thighs or wings and it would be equally delicious.
These Cilantro Lime Chicken Drumsticks are super light and refreshing for being… ya’ know… a piece of meat. But seriously, that’s probably why it’s so easy to eat them all. To round out your meal and keep with a citrus theme (cuz themes are fun), my Orange Spiced Hasselback Sweet Potatoes would make an excellent side. Plus they’re also perfect for impressing guests or saving for the week ahead.

Get creative and feel free to make this recipe your own by adding whatever other flavorings or seasonings you want. Fresh rosemary, dill, thyme, parsley. Lemon. Orange. Cayenne. Garlic. - 6 chicken drumsticks
- ¾ cup cilantro
- 1 tsp. salt
- 1 tsp. pepper
- ½ tsp. red pepper
- Zest of one lime
- Juice of one lime
- 2 Tbsp. olive oil
- Preheat oven to 350℉.
- Wash and chop cilantro.
- Place chicken drumsticks into a bowl and add cilantro, lime zest, lime juice, salt, pepper, red pepper and olive oil. Mix thoroughly.
- Marinate for 2-3 hours in the fridge for the tastiest outcome! Or bake right away if you’re in a time crunch.
- Place drumsticks on a lined baking tray and cook for about 25-30 minutes or until the outside is golden brown and the inside is completely cooked through.
- Remove from oven and serve hot.
